Scrambled tofu has got to be one of the most delicious and satisfying breakfasts there are. The high protein content of the tofu and healthy fats coming form the avocado will keep you satiated for hours, add vegetables and a nice whole grain wrap and you’ve got yourself a seriously powerful breakfast. Conveniently, enveloping scrambled tofu into burrito makes it easy to take on the go!

What You’ll Need:

  • 1 recipe Scrambled Tofu
  • whole grain flour tortillas (1 large, or 2 small)
  • lettuce or baby spinach
  • sliced tomato
  • sliced avocado
  • optional: your favourite combination of hummus, salsa, sriracha, hot sauce, or vegan mayo, etc.

How to Assemble:

Before you get your Scrambled Tofu cooking (or while it’s cooking if you’re speedy and organized), begin washing and preparing your lettuce, sliced tomato, and sliced avocado. Gather any condiments you wish to accompany your wrap.

My favourite combinations are:

hummus + sriracha | vegan mayo + fresh dill + cracked pepper | salsa + guacamole (sub for avocado)

To begin assembling your wraps, lay 2 whole grain flour tortillas flat onto a clean surface. 1 recipe of Scrambled Tofu should make enough for 2 medium sized breakfast wraps.

Arrange a few leaves of lettuce vertically down the center of your wrap. I used butter lettuce, baby spinach would be really good as well. Evenly divide the hot scrambled tofu and lay it down on your bed of lettuce topped with sliced avocado and tomato.

You can now fold up your wrap, or make some customizations! Add a little salsa and guacamole for a breakfast-style burrito, add some sriracha or hot sauce if you like things a little spicier, or if you like to stick with something a little more basic, a thin spread of vegan mayo and a sprinkle of fresh dill is delicious too! A melted sprinkle of non-dairy cheese like Daiya Cheddar-Style shreds is also a great addition.

Once everything is to your liking you can fold the sides into the center and fasten with a toothpick. Enjoy!

Scrambled tofu is an ideal choice for making all sorts of vegan breakfast sandwiches. Branch out from the breakfast wrap and try this recipe on an English muffin, a bagel, or a nice big baking powder biscuit. Plain scrambled tofu also pairs well with toast/hash browns and some fresh fruit.

Ingredients

  • 1 recipe scrambled tofu
  • 1–2 whole grain wraps (1 large, or 2 small sized wraps)
  • 1 handful lettuce or baby spinach
  • 3 slices tomato
  • 1/2 sliced avocado
  • Optional: hummus, sriracha, salsa or vegan mayo

Instructions

  1. Lay a bed of lettuce in a line down the center of a whole grain wrap. Top with scrambled tofu, avocado and tomato.
  2. Try experimenting with different flavours by adding salsa, hummus, sriracha, vegan mayo, or other condiments.
  3. Fold the sides of the wrap in and fasten with a toothpick.

Notes

You can prepare the scrambled tofu in advance and reheat before assembling your wrap.

    Lol why does it say prep time : 10 hours and cook time: 15 hours, do you mean minutes?

    Why is there cholesterol? I thought all vegan foods do not have cholesterol since it comes from animals.

      I apologize for that, some of my older recipes used a recipe card plugin that would try to auto populate the nutrition info and this appears to be one of them. Thanks for pointing that out, it’s something I really need to fix!
